Chicken Biryani

Weekend would be so boring without chicken 😛 Yummy Chicken Biryani with Boondi raita 🙂

Ingredients:
Serves 2

For Chicken marination:

  • 1/2 Kg chicken
  • 2 Tablespoon yogurt
  • 1 Tablespoon lemon juice
  • 1 Tablespoon coriander powder
  • 1/2 Tablespoon turmeric powder
  • 1/2 Tablespoon red chilly powder
  • 1 Tablespoon ginger-garlic paste
  • 1/2 Tablespoon black pepper powder
  • Salt

For biryani:

  • 1 Cup cooked Basmati rice
  • 2 Large chopped onions
  • 1 Chopped tomato
  • 2 Bay leaves
  • 3-4 Cloves
  • 1 Tablespoon cumin seeds
  • 1/2 Tablespoon fenugreek seeds
  • 1 Inch Cinnamon stick
  • 2 Red chilly
  • 2-3 Green cardamoms
  • 1/4 Tablespoon saffron
  • 3-4 Tablespoon milk
  • Oil/Ghee
  • Salt

Recipe:
For chicken marination
Mix all the marination ingredients with chicken in a bowl and keep it overnight for better result

For Biryani
Step 1- The rice has to be 75% cooked. While cooking add salt also. Keep aside
Step 2- Heat oil/ghee in a deep frying pan and add chopped onions and fry on high flame till the become dark golden brown. Keep aside in a plate

Step 3- In a pressure cooker or a pan, heat 3 tablespoon oil/ghee. Add spices – Red chilly, Cumin seeds, Bay leaves, Green cardamoms, Cloves, Cinnamon stick, Fenugreek seeds and sauté till they crackle
Step 4- Add half fried onions and fry for 2mins on medium flame and then add the marinated chicken and chopped tomatoes together and fry. Do not add water

Step 5- Add salt and and let the chicken cook and meanwhile warm 3 to 4 tbsp milk in a microwave add ¼ tsp of saffron strands. stir and keep aside.

Step 6- Once the chicken is done, start layering with the rice

Step 7- Add saffron milk and  the other half golden brown onions

Step 8- Close cooker with the lid. Keep tawa on the stove and then put cooker on the top and leave it for 30-35mins on low flame

Your biryani is done 🙂 add chopped coriander leaves

Now serve with boondi raita 🙂
