Litti Chokha

“Litti” A Traditional Dish From Bihar. It is mostly eaten with Chokha which is made from roasted brinjal or mashed potato or mixing both. Litti Chokha is a very common dish served in Bihar, U.P and Jharkhand as a breakfast, tea time snack or dinner.

I found the process little time consuming. But trust me it’s WORTH IT 🙂 Best tea time snack for rainy season 🙂

There are several ways of preparing Litti Chokha. The littis’ are traditionally baked over a cow-dung fire (Yeah Right 😛 ), then dipped in ghee and served, You can even deep fry them or bake them in oven.
Ingredients:
For Dough

  • 2 Cup wheat flour
  • 1 Tsp Black caraway seeds/ mangraila
  • 1 Tbsp oil
  • Luke warm water
  • Salt

For Filling

  • 1 Cup sattu
  • 1 Tsp carom seeds/ ajwain
  • 4-5 Chopped garlic cloves
  • 2 Slice chopped ginger
  • 2 Tbsp lemon juice
  • 1 Tbsp mango pickle oil (Optional)
  • 2-3 Chopped green chilies
  • Finely chopped onion
  • Salt

For Chokha

  • 1 Big roasted brinjal
  • 2 Roasted tomatoes
  • 2 Boiled potatoes
  • 1 Small Onion (Chopped)
  • 2 Green chilies (Chopped)
  • 2 Garlic cloves (Chopped)
  • 1 Slice ginger (Chopped)
  • 1 Tsp red chili powder
  • 1 Tbsp chopped coriander leaves
  • 1 Tbsp oil
  • Salt

Recipe:
Here I have baked them in oven at 375º-400ºF  (180ºC). You can even deep fry them or bake them on tawa.
For Dough
Step 1- Mix black caraway seeds, Salt and oil in wheat flour and mix well
Step 2- Make dough using luke warm water. Using luke warm water will make your dough soft. Cover the dough using wet cloth for 30mins
For Filling
Step 1- Mix carom seeds, chopped garlic cloves, chopped ginger, lemon juice, mango pickle oil (Optional), chopped green chilies and chopped onion in sattu
Step 2- Add salt and mix well
For Shaping Of Litti
Step 1- Make medium size balls from the dough
Step 2-  Now roll each dough like thick poori and stuff the filling and shape it like a round balls
Step 3- Preheat oven at 400ºF and bake for 20mins, flip after 20mins and bake for another 15mins
Step 4- When cooked dip in ghee

If deep frying, cook on medium flame and remove when golden brown. Or roll like chapati and cook on tawa with or without oil (as you like)
For Chokha
Step 1- Heat oil in a pan and add chopped ginger, garlic and green chilies and saute for 30secs
Step 2- Add chopped onion and fry until translucent. Then add roasted mashed tomatoes and fry for 1-2min, then add red chili powder
Step 3- Mash the roasted brinjal and boiled potatoes. Add mashed brinjal and saute for 3-4mins then add mashed potatoes
Step 4- Add salt and chopped coriander leaves and turn off the flame

Serve warm litti with chokha and coriander chutney.
