Cheesy Egg Muffins, Mashed Potato & Roasted Broccoli

This quick and easy cheese egg muffin recipe is perfect for any time of the day. Cheese egg muffin or cheese omelette is an excellent source of protein.

Quick recipe for the breakfast. Serve with Ginger roasted broccoli and mashed potato

Serves 2

Ingredients:

For Cheese Egg Muffin

  • 4 eggs
  • 1/2 Cup cheddar cheese/ Amul cheese
  • 1/4 Cup milk
  • 1/4 Cup chopped coriander leaves
  • 1 Tsp black pepper powder
  • 1 Boiled and chopped potato
  • Salt
  • Butter

For Mashed Potato

  • 2 Boiled potatoes
  • 1/2 Tsp Black pepper powder
  • Salt
  • Chopped onion for garnishing
  • Chopped coriander leaves
  • Lemon

Recipe:

Cheese Egg Muffin

Step 1- In a bowl beat eggs, black pepper, salt and milk together and add chopped coriander leaves

Step 2- Grease the muffin pan with butter and pour the egg batter evenly

Step 3- Add some chopped potato on each muffin cup and then grate the cheese on the top

Step 4- Preheat oven at 375ºF (180ºC) and cook the egg muffins for 12-15mins

Turn off the oven and serve the muffins with coffee for breakfast

Mashed Potatoes

Step 1- Peel the boiled potatoes and mash them using your hands

Step 2- Add black pepper powder and salt and mix well

Garnish with chopped onions and coriander leaves. And squeeze lemon on top and serve
