A very quick lunch idea when you have less time. One pot tomato rice recipe that can be made easily on busy days or on weekends when you are in no mood to cook a whole meal. 😛 This works great for me. 😛 Enjoy your weekends or busy day as well.

Simply serve with raita and enjoy your quick and yummy meal 🙂
Serves 2
Ingredients:

  • 1/2 Cup rice (soaked for 30mins)
  • 1 Large onion thinly sliced
  • 2 Large chopped tomatoes
  • 1 Tbsp ginger-garlic paste
  • 2-3 Green chilies
  • 1 Bay leaf
  • 1-inch cinnamon stick
  • 1 Tsp cumin seeds
  • 1 Tsp fennel seeds
  • 2-3 Green cardamom
  • 1 Tsp turmeric powder
  • 1 Tsp red chili powder
  • 1/2 Tsp garam masala
  • 2 Tbsp chopped coriander leaves
  • 1 Tbsp chopped mint leaves
  • Salt as required
  • Oil for cooking

Recipe:
Step 1- Heat oil in a pressure cooker/Deep pan/ kadhai and add bay leaf, cinnamon stick and green cardamoms. Sauté for 20secs then add cumin and fennel seeds and let them splutter. Add Chopped onion, green chilies and fry until light golden color and then add ginger-garlic paste and sauté until the raw smell of paste goes away. Keep the flame medium

Step 3-  Add the spices powder- turmeric, red chili powder, garam masala, and salt. Mix well and fry the masala

Step 4- Add the chopped tomatoes and fry on medium flame until mushy then add chopped coriander and mint leaves

Step 5-Fry until it starts leaving oil from sides or its cooked properly and raw smell of tomatoes are gone

Here I am using a Rice Cooker. I transferred the masala to a Rice cooker.
Step 6- Add 1 cup water to the masala, salt, and soaked rice.Stir well and cover the lid of the Rice cooker. Switch on the rice cooker and cook

If using Deep pan/ Kadhai Turn the flame to high. When it starts boiling lower the flame.Cover with the lid. and let it cook on slow flame for 18-20mins. Keep checking
If using pressure cooker Turn the flame to medium and cover the lid of the cooker and pressure cook for 1 whistle and turn off the flame. Let the pressure goes off completely and then open the lid.



Serve with your choice of raita and salad. 🙂
