Learn Step By Step Recipe With Pictures for Semolina Kachori/ Sooji Kachori/ Rava Kachori

Serves 4-5

Ingredients:

For Dough

  • 1 Cup sooji/ semolina/ rava
  • 2 Cup water
  • 1 Tsp Salt
  • 1 Tsp carom seeds

For Stuffing

  • 3-4 Boiled potatoes
  • 1 Tsp carom seeds
  • 2 Chopped green chilies
  • 1 Tsp ginger paste
  • 4-5 Dry curry leaves (optional)
  • 1/2 Cup chopped onion
  • 1/2 Cup boiled green peas
  • 1 Tsp red chili powder
  • 1/2 Tsp kachori masala or 1/2 tsp garam masala+ 1/2 tsp amchur
  • Salt as required
  • oil for deep frying

Recipe:

Step 1- Add 2cups of water in a pan and bring it to boil and then reduce the flame to low and add salt, carom seeds and stir well

Step 2- Add sooji in parts and keep stirring to avoid lumps

Keep stirring continuously and cook on low flame until the mixture becomes thick in consistency. Turn off the flame and Keep it aside to cool.

Step 3- Heat oil in a pan and add cumin seeds, ginger paste, green chilies and let them splutter then add green peas and mash a little. Add kachori masala, red chili powder  and fry for 3-4mins on low flame

Step 4- Add salt, mashed potatoes and mix everything well and fry for another 2mins and turn off the flame. Let the stuffing cool down little

Step 5- Grease your hands with oil.  Take one ball, flatten it between your palms, place 1tbsp of stuffing in the middle and seal the edges.  Gently flatten the stuffed dough ball with your hands giving the shape of kachori

Step 6- Heat oil in a pan. The oil should be medium hot. Fry these kachoris on medium heat until golden brown and crisp. Frying on medium heat will make the kachoris crisp. Remove on a kitchen towel

Serve hot with ketchup or tamarind chutney and enjoy with tea ūüôā
