Coriander Chicken Dry

I just love the flavor of fresh coriander. I can’t resist the smell of fresh coriander leaves and I end up garnishing almost every Indian curry with these beauties 😋 Coriander leaves are always on the top of my grocery shopping list😬 This time I tried chicken in coriander chutney and trust me that came out really well. Tried the dry as well as gravy version of it. Both tastes awesome and full of flavours.
Although the spices powder are already available in the market but no store bought spices can beats the taste of homemade fresh spices. So I roasted the required spices and grinded them to a powder. This recipe is specially for the foodies who loves the flavour of coriander. Try this dry version of chicken coriander soon and enjoy every bite of it😋 
For marination 

  • 500gms chicken 
  • 1/2 Cup thick curd
  • 1 Tsp red chili powder 
  • 1 Tbsp lemon juice 
  • Salt as required 

For masala 

  • 2 Bay leaves 
  • 1-2 Dry red chili 
  • 1 Tsp cumin seeds
  • 1 Tsp fennel seeds
  • 1 Tbsp coriander seeds
  • 2 Cloves
  • 6-7 Black pepper corns
  • 1 Black cardamom 
  • 2-3 Green Cardamoms 

For coriander paste

  • 1 Cup chopped coriander leaves 
  • 6-7 Garlic cloves
  • 1/2 inch ginger
  • 1 Green chili 
  • Salt as required 

Others ingredients 

  • Mustard oil for cooking

Step1- Take all the whole spices on a tawa/pan and roast them on low flame utnilyou  gets a nice aroma or until the spices are brown in color. Do not burn them. Let it cool and then grind to a smooth powder and remove in a bowl
Step 2- In the same jar take chopped coriander leaves, ginger-garlic, green chili, salt and 1tbsp water. Grind to a smooth paste

Step 3- In a large plate take chicken pieces and add thick curd, coriander paste, homemade spices powder, red chili, lemon juice and salt as required. Mix well and refrigerate for 1 or more hour
Step 4- Heat oil in a pan and add marinated chicken. Cook on medium flame
Step 5- Keep cooking until the chicken pieces are soft and tender. Don’t cover while cooking. When cooked remove on a plate and serve 

Serve with some onion rings and enjoy the tangy coriander chicken
