You won’t believe but I love visiting Costco and I don’t even know why. 😛 I really look forward to Costco visits. And every time we use to visit Costco I always wanted to grab that baby potatoes medley pack from the veggies section. Those red and brown baby potatoes look very pleasing to eyes. 😀 So this time finally I bought that pack but didn’t know what I was going to do with it other than making Dum Aloo Curry or Sarson Masala Aloo. 😀

So I was just staring at these beautiful baby potatoes and that’s when I thought I will just roast them with some herbs, garlic, and parmesan cheese. This is now one of my favorite side dishes made of potatoes. All you need is few ingredients for this cheesy and garlicky potatoes. So next time you know what you have to buy when you visit Costco. 😀 Or you can find these baby potatoes in any other store too.

Ingredients:

Recipe:

Step 1- Preheat oven at 400ºF. Wash and halve the potatoes. Line a foil in a baking tray and place the potatoes. You can place some veggies too if you want or just skip the veggies

Step 2- Now add chopped garlic, extra virgin olive oil, salt, pepper and herbes de province. Toss the veggies and potatoes slightly and then sprinkle the parmesan cheese on top

Step 3- Bake for 40-15mins and then remove from the oven. Add chili flakes and serve
