Red Curry Fried Rice | Thai Red​ Curry Fried Rice

Any kind of fried rice is such a comfort food for me that I can have it every alternate day. If you ask me is there any shortcut for yummy food without spending too much time in the kitchen? Then the answer is of course YES! There are many but today I am sharing the yummy, healthy, little spicy and colorful dish which am sure everyone is going to love. And to know how it tastes…Try making soon. :D.  Although I am not fond of Thai curries, when I tried green and red curry fried rice, THAT WAS AWESOME and since then I wanted to try that. So here it is, Spicy thai red curry fried rice. Mix and match the veggies according to you and top it up with chicken breast pieces or shrimp (if required) and serve.

The secret tip for the perfect fried rice recipe is, always use a day old rice because it absorbs the flavor well and the rice grains stay separated. But if you forgot to cook a day before it’s perfectly ok. Cook then and spread on a plate and let it cool down completely. You can make this dish using any rice but for thai dishes, I always prefer jasmine rice cooked in coconut milk.

Ingredients:

For Rice

  • 1 Cup jasmine rice
  • 1 Cup water
  • 1 Cup coconut milk
  • 1/4 Tsp turmeric powder
  • Salt as required

For Fried Rice

  • 1 Small green bell pepper, chopped
  • 1/2  Small yellow bell pepper, chopped
  • 1/2 Small orange bell pepper, chopped
  • 1/2 Cup Carrot, cut into julians
  • 3 Garlic Cloves, minced
  • 2 Tbsp red curry paste
  • 1 Tsp dry crushed basil leaves/ fresh basil leaves
  • 1/4 Cup coconut milk
  • Salt as required
  • 1/4 Cup coconut oil

Recipe:

Step 1- Thai fried rice tastes awesome if using previous day rice. But you can use freshly made too. To make rice add rice, water, coconut milk, turmeric powder, and salt as required and cook

 

Step 2- Heat oil in a large skillet pan and saute minced garlic and then add all the veggies and fry on high flame for 2mins and then add the red curry paste and stir occasionally and add in the coconut milk

 

 

Step 3- Once the mixture is thick add in the dry crushed basil leaves, required salt, and rice. Mix everything well and turn off the flame

Top with some lemon wedges and your favorite meat and serve. 🙂 Enjoy the vibrant plate of comfort food with your family and friends.
