Whenever I hear Gulab-Jamun only one word comes to my mind, YUMMY. 😀 I don’t think any Indian will refuse to have gulab-jamun any time. They are one of the MOST popular sweets. Wedding season, Festive season or no festive season or Birthday party, Gulab-jamuns are always hit for any occasion.
The last I remember when I had Gulab-Jamun was almost 4months back. Yes, I am not kidding here. Since months I have not eaten Gulab-Jamun. 😀 Why? Because I don’t eat sweets much and who will make it? :P… Store bought gulab-jamun?? Mmmm…NO! You won’t believe how much time it took me to prepare this yummy gulab-jamuns. ONLY 30 minutes. Yes, seriously. Well…to be very honest I too was thinking this whole process will take at least 1 1/2hr to 2hrs easily.
The authentic gulab-jamun recipe requires using khoya.You can prepare khoya by boiling whole milk until it reaches to the desired quantity, but that requires a lot of time and patience. You can buy khoya from the store. I have used milk powder to make these gulab-jamuns. Let’s leave the khoya gulab-jamun recipe for some other time. 😀
Serves 10-12 Gulab Jamun
Ingredients:
- 1 Cup milk powder
- 1/4 Cup + 2 Tbsp all-purpose flour
- 1 Tbsp ghee
- A pinch of baking soda
- 1 Tbsp curd
- 1 Tbsp milk
- Oil/ ghee for deep frying
For Sugar Syrup
- 1.5 Cup water
- 1.5 Cup sugar
- 1 Tsp crushed green cardamom
- Few drops of rose water

Recipe:
Step 1- In a pan take sugar, crushed cardamom and water. Bring to a boil until it turns slightly sticky. Turn off the flame and add rose water. Keep aside
Step 2– In a mixing bowl take milk powder, all-purpose flour, and a pinch of baking soda. Mix well with a fork and then add ghee. Mix using your fingertips
Step 3- Mix curd and milk together with 1tbsp water in a bowl and then add this to the flour mixture. Knead to a sticky dough. DO NOT ADD WATER. Grease your palm with oil/ ghee and divide the dough into 10-12 small equal portions and make balls
Step 4- Heat oil in a pan until medium hot and fry the balls until golden. Keep stirring the balls to fry uniformly. Remove on a paper towel. Add the balls to hot sugar syrup and let it rest for 5-6hrs
