Dum Aloo | Aloo Dum | Bihari Style Dum Aloo Recipe

Dum Aloo– Kashmiri Dum Aloo, Punjabi Dum Aloo, Bengali Dum Aloo, Bihari Dum Aloo..Phew! Every state has its own version of Dum Aloo. 😀 After trying all these mentioned versions I can say my favorite is Bihari style Dum Aloo. This is as spicy and flavorful as this looks. Well, Bengali and Bihari style dum aloo is almost or I guess is totally same (correct me if I’m wrong). They both are rich in spices and heavenly in taste. 😀
Baby potatoes are so easy to cook and they look so cute and beautiful that I have a bag full of baby potatoes lying on my kitchen counter. 😛 I usually make the mustard-aloo with them or bake them with veggies. But this time I got this recipe from my darling sister-in-law. She has sent me a picture of her Dum-Aloo curry dish and I couldn’t resist torturing her until I got this recipe from her. 😀 Though the recipe looked little time-taking and yes it is time taking. But It’s worth the time consumed in making this Dum Aloo. I loved this recipe. Trust me you will love this recipe. 🙂

Usually, for Dum Aloo baby potatoes are used but it’s perfectly ok to use the normal potatoes. Dum Aloo is made by deep frying the boiled baby potatoes but here I have fried them using only 2tbsp oil just to avoid the extra calories. 😛 But trust me the taste was still the best. Adjust spices according to you and I would suggest serving this flavorful spicy Dum Aloo with Puri or jeera rice.

Ingredients:
For cooStylePotatoes

  • 18-20 baby potatoes, boiled
  • 1/4 Tbsp turmeric powder
  • 1/4 tsp kashmiri red chili powder
  • 1 Tsp salt

For Gravy

  • 2 Large onion paste,
  • 1 Medium onion, finely chopped
  • 2 Large tomato, chopped
  • 1 Tbsp ginger-garlic paste
  • 1 Tsp Crushed green chilies
  • 2 Tbsp cumin seeds + 1Tsp cumin seeds
  • 1 Tsp black peppercorns
  • 1-inch cinnamon stick
  • 3 Black cardamoms
  • 5 Green cardamoms
  • 4 Cloves
  • 1 Tbsp red chili powder
  • 1 Tsp kashmiri red chili powder
  • 1 Tsp turmeric powder
  • 1 Tsp amchur
  • 1/2 Tsp sugar
  • Salt as required
  • Mustard oil for cooking
  • Chopped coriander leaves, for garnishing

Recipe:
Step 1- Soak the whole spices (2tbsp cumin seeds, cinnamon stick, black peppercorns, black cardamoms, green cardamoms, and cloves in 2tbsp of water for 8-10mins and then coarsely grind them
 


Step 2- Peel and prick the boiled baby potatoes using a fork so that the potatoes absorb the flavors of the masala. Heat 1tbsp mustard oil in a pan/ kadhai. Add the pricked potatoes with turmeric powder, red chili powder, and salt. Fry them till they turn golden brown and crisp. Then remove on a plate
 

Step 3- In the same pan sizzle 1tsp cumin seeds and then add sugar with the chopped onion. Fry them until they turn translucent
 

Step 4- Add the ginger-garlic and crushed green chili paste until the raw smell goes off and add the onion paste. Cover and cook the onion paste for 12-15mins on low flame or until the onion paste is finely cooked. Add the coarse masala mixture and fry for another 2mins
I always fry onions for 2mins before grinding them to a paste so that they get properly cooked and gives a nice flavor to the curry
 

 

Step 5- Now add the red chili powder, kashmiri red chili powder, turmeric powder and amchur powder. Mix everything and fry for 1min. Add chopped tomato and required salt. Cover the lid of the pan and cook until the tomatoes turn mushy

Step 6- If you want gravy then add water as required or add 2cups of water and let it simmer on low flame until the gravy turns thick. You can always add less or more water depending upon how thick or thin gravy you want. Adjust salt if required. Add the cooked potatoes and let it simmer on the low flame for 8-10mins.Turn off the flame and garnish with coriander leaves

Serve this spicy and delicious Dum Aloo with jeera rice, chapatti, puri or naan. And don’t forget to serve some pickled onion. Enjoy eating. 🙂
