Whole-Wheat Apple Loaf Cake | Healthy Apple Cake Recipe

Posted by

I have a basket full of apples lying in my kitchen which I am not sure how I’m going to use it other than eating as it is. I have not yet posted an apple recipe which is very bad.  I tell you these lazy winter mornings 😀 …All you need is a cup of coffee with a piece of spiced, flavored bread. The last time I remember I posted something using apples was a year back when I shared Apple Cinnamon Cake and healthy Apple Cinnamon Juice.
Winter is a season when you automatically crave for spiced or flavored bread or fruit bread with a cup of coffee/ masala tea. And it’s Thanksgiving! There has to be something special or some dessert. Yeah? I know! 😀 So, without wasting any more time and to sort out my morning breakfasts for few days, I searched for some healthy apple recipes. And Tan…Ta…Dan! After going to so many apple pie recipes I finally got a recipe which was easy and healthy too. This has an apple and instead of all-purpose flour, it has whole-wheat flour, which means it is healthy. To add more flavor you can add cinnamon powder. Make to taste it and to fall in love with it. ❤
Serves- 1 Loaf

  • 1 Cup apple, finely chopped
  • 18-20 thin apple slices

Step 1- Preheat the oven to 338ºF. Wash the apple and peel if you want else without peeling finely chop half of the apple. And thinly slice the other half. Keep them aside

Step 2- In a large mixing bowl, take an egg, oil, sugar, and vanilla essence. Using a hand whisker whist it until well blended and smooth.  Add the buttermilk, ½ cup water and whisk again

Step 3- Now add whole wheat flour, nutmeg powder, baking soda, baking powder to the bowl and gently fold the mixture. Lastly, add the chopped apple and cocoa powder to the batter and give it a gentle mix
Add water if required to make the batter of thick yet flowing consistency

Step 4- Grease a loaf pan with some butter/oil and pour the mixture into the loaf pan. Place the apple slices over the top of the batter and bake for 40mins. Lower the temperature to 330ºF and bake for 10mins more.
To check, insert a toothpick into the loaf and if it comes out clean then remove from the oven else bake more until done. Remove on to a cookie rack and let it cool down completely

Microwave for 30secs and spread some chocolate sauce over it and serve with a cup of coffee or masala tea. Or serve hot with a chilled ice-cream. Enjoy 🙂
