As the name says it all- these are healthy, addictive, soft, and chewy cookies. No fancy ingredient has been used while making them. I am sure you have everything is already available in your pantry. Trust me these are the best oatmeal cookies you will ever bake.
I have a big pack of 100% whole grain steel cut textured oatmeal which of course, nobody wants to eat. It’s boring! I guess my husband was on a mission to figure out the way to use these oats and when he found that this oatmeal can be used to bake delicious cookies, he was behind me for last 2 month…3 months…Ahhh! actually, more than 5months to bake cookies for him. 😀 It’s not that I haven’t prepared any other healthy cookies for him, he specifically wanted oatmeal cookies. Now that I have baked these cookies I am sure the rest of the oatmeal will be used for making these cookies again and again. <3
These soft and chewy cookies are loaded with dried cranberries and choco-chips. And a hint of cinnamon and vanilla bring a nice flavor to these cookies. I have replaced all-purpose flour with the whole wheat flour, butter with olive oil, and regular sugar with brown sugar. Healthy as well as tasty! You can either keep them plain and simple or add your favorite nuts, raisins, and dried berries.

Serves 24 Cookies
- 2 Cups steel cut oatmeal
- 1 ¾ Cup whole wheat flour
- ¾ Cup olive oil
- 1 ½ Cup brown sugar
- 2 eggs
- ½ Cup dried cranberries
- ¼ Cup choco chips or raisins (optional)
- 2 Tsp vanilla essence
- 2 Tsp ground cinnamon
- ¼ Tsp salt
- 1 Tsp baking powder
- ¼ Tsp baking soda

Step 1- In a mixing bowl, take olive oil, eggs, brown sugar, and vanilla essence. Mix well until the sugar is dissolved
Step 2- Add baking soda, Baking powder, salt, ground cinnamon, dried cranberries, and choco-chips. Gently fold everything using a spatula or whisk
Step 3- Add the whole wheat flour and oatmeal to the bowl. Grease your palms and bring everything together. Do not knead, just bring everything together to form a sticky mixture
Step 4- Preheat oven to 375ºF. Line a baking tray with cookie sheets or grease with oil and dust with some flour. Drop dough in equal 24-26 parts about 2inces apart from each other. Flatten them using a greased spatula. Place the baking tray in the heated oven and bake for 12-13mins
Step 5- Remove them on a wire rack and let them cool down completely. Store in an airtight jar and enjoy with a glass of milk or a cup of coffee
