How on the earth can anyone like this? And, WHY? Tofu! Yes, you heard me. It was me after trying a recipe with tofu from the internet and to tell you the truth, I have never ever thought I will try a recipe with tofu on my own. That was my first trial on grilled tofu at home and buoy, it was an epic FAIL! I am not sure what went wrong, whether it was my alteration in the recipe or is it because of using firm tofu for the recipe which called for using extra firm tofu. Meh! However, I have always enjoyed eating tofu in Stir-fry recipes or Thai Dishes, and I really like the texture of the tofu there. It was later when I came to know they are deep-fried, though it doesn’t make any difference to my take-out and dine-in orders. I still order Thai curries with tofu and lots of veggies. Chewy and crispy from the outside and soft from the inside. Yummm! How on the earth can anyone NOT LIKE tofu? 😀
I did nothing today, like literally NOTHING! I took off everything I was doing, just to complete the book I got from the library yesterday. It’s been a really long time since I did nothing else than reading my favorite book with a cup of coffee or tea on the side. Even though I read a book almost daily whenever I get time, still somewhere between reading my mind would not stop thinking about the next meal I have to prepare, the pile of dishes in the sink which needs to be clean, the piles of clothes lying in the laundry bag…etc etc…Phewww! It has to stop and everything can wait for a while. Am I making some sense here? It’s good to enjoy some time with yourself doing nothing or simply doing something you enjoy. JUST LEAVE everything you are doing right now, pause for a few minutes and take a break. It won’t do any harm. Everything can stop for a few minutes. Just relax!
After I completed the book, I feel refreshed, alive, relaxed, and HAPPY! The husband came home in the evening, we enjoyed our tea and went to the nearby store to pick up some green veggies and tofu. I prepared this simple, quick, and delicious dinner within 30 mins. Sesame-ginger stir-fry tofu loaded with veggies and some sticky rice on the side. Healthy and yummy dinner ready in a flash. It indeed was a good day.

Can we make it with just Firm Tofu? Well, yes you can, though I would suggest using Extra Firm Tofu to get the perfect level of crispness without deep-frying them and also they will not break while pan frying. To get the texture like take-out tofu’s without deep-frying, pan fry the extra firm tofu with cornstarch. You can use any meat instead of tofu to prepare this Sesame-Ginger Stir Fry and I promise, it will taste great. To make the sauce thick add the cornstarch slurry and some water. Serves 2
Ingredients:
- 8 oz Extra Firm Tofu*, cubed
- 1 Tsp cornflour
- ½ Tsp black pepper powder
- 1 Cup mixed bell peppers (red and green), cubed
- 6-8 Asparagus, woody ends chopped off
- 1 Cup broccoli florets
- ¼ Cup spring onion whites, finely chopped
- 1 ½ Tsp to 1 Tbsp ginger, finely chopped (as desired)
- ½ Cup spring onion greens, chopped
- 1 Tbsp toasted sesame seeds
- 2Tbsp avocado oil/ cooking oil
- Salt as required
*Note- Before cutting tofu, press and release the water as much as you can and keep the tofu in between paper towels for 8-10mins
For Sauce
- ¼ Cup less sodium soy sauce
- 2 Tbsp red chili sauce
- 1 Tsp Tabasco sauce (optional)
- ¼ Tsp crushed black peppercorns
- 1 Tbsp honey
- 2 Tbsp water
- Requires salt
*Please feel free to adjust the sauce as desired
Learn Step By Step Recipe With Pictures For Ginger Sesame Tofu And Veggies Stir Fry
Recipe:
Step 1- In a mixing bowl, gently toss cubed tofu with cornflour, ½tsp salt, and ½tsp black pepper powder. Keep aside for 10mins. Meanwhile, mix all the ingredients mentioned under sauce in a bowl and leave until required
Step 2- Heat oil in a skillet pan, and pan fry the tofu on medium flame until crisp and brown from both the sides. Transfer to a plate
Step 3- To the same skillet pan, add the chopped ginger and spring onion whites and saute until golden brown
Step 3- Add the veggies to the pan and fry on high flame until it’s done. Frying on the high flame will retain the crispness of the veggies and its color. Cooking veggies will take approx 4-5mins. Turn off the flame and add the fried tofu and the prepared sauce
Step 4- Add the toasted sesame seeds and spring onion greens. Give it a mix and serve over steamed white or brown rice or quinoa
