Achari Aloo Paratha is more flavorful, spicy, tangy because of the pickle masala, and of course, delicious than the regular stuffed Aloo Paratha. The flavor of homemade Achar (Pickle) makes this Paratha unique and mouth-watering. The preparation is the same as our regular Aloo Paratha though, just add a few more crushed spices and pickle masala to the aloo mixture and it’s ready to be prepared. I have used homemade Aam Ka Achar (Mango Pickle), in case you do not have homemade pickle then you can use the store bought pickle masala too. Adjust spices and heat as per your liking.
Aloo Paratha stuffed with a generous amount of spiced potato mixture, serve with a bowl of curd and pickle on the side is a staple and favorite breakfast of North India. Other than curd and pickle on the side, I always prepare Tomato Chutney to serve as a side to any stuffed Parathas. I don’t have a written recipe for the Tomato Chutney, but I will try to post it as soon as possible. I can eat Aloo Paratha every alternate day for breakfast without getting bored of it as there are several ways to prepare the stuffing of Aloo Paratha and each tastes delicious. My new favorite is Achari Aloo Paratha. I was craving for Aloo Paratha and while preparing the stuffing I added few whole spices and homemade pickle masala to the aloo mixtures just to make it different than the regular Aloo Paratha and trust me, it took the already delicious Paratha to another level. I have already prepared it twice the previous week and I am going to prepare this again for the weekend brunch, if not breakfast. 😀 I genuinely insist you trying this Achari Aloo Paratha.

Serves 8 Parathas
Ingredients:
(1 Cup = 250ml)
For Dough
- 2 Cups whole wheat flour
- 1 Tbsp oil
- 1 Tsp carom seeds
- ½ Tsp black caraway seeds
- Salt as required
- Lukewarm water for kneading the dough
- ghee or butter, for cooking parathas
For Stuffing
- 4 Large potatoes, boiled and mashed
- ½ Cup red onion, finely chopped
- ¼ Cup coriander leaves, finely chopped
- 2-3 Green chilies, finely chopped
- 1 Tsp carom seeds
- ¼ Tsp black caraway seeds
- ½ Tsp crushed fennel seeds
- ½ Tsp crushed cumin seeds
- 1 ½ Tsp achar masala/ pickle masala
- ½ Tsp chat masala
- Black salt, as required
- 1 Tbsp lemon juice
- 1 Tsp pickle oil

Step 1- In a large bowl take whole wheat flour, black caraway seeds, carom seeds, salt, and oil, mix very well with your fingertips. Using the lukewarm water knead to a smooth dough. Grease the dough with oil and keep aside for 15-20mins
