Fajita Omelette

Fajita Omelette, a spicy kick-start to the day. Loaded with favorite veggies, seasoned with chipotle powder, and topped with sour cream is a delicious and healthy breakfast for your family.

Omelette is our favorite breakfast for the weekends. Though we really love our basic onion-green chilies-coriander leaves omelette with bread toast and extra butter, sometimes I try experimenting making with other veggies too. The last time I have tried omelette with avocado and cherry tomatoes and so many people have liked it. Do try this Avocado Cheese And Cherry Tomato OmeletteΒ and I promise you won’t be disappointed. The husband was on leave as he was down with cold so I wanted to treat him with something he likes and something which is easy for me to cook in the morning. Well, the omelette was prepared within 15mins from chopping to serving yet he couldn’t eat the breakfast for the next 10mins. Guess why? Ahhh…side effects of marrying to a food blogger. I was not with the pictures yet. The poor husband! πŸ˜›

Me- Of course, it is for you. I set this breakfast table for you only (*still busy in clicking pictures)

He- Well, YEAH! I can see that. At least let me have a bite (*almost there to have a bite*)

And finally, after waiting for 10-15mins he gets his breakfast plate. Well, this was not the first time he had to wait. Sometimes I do feel bad for him when he has to wait even when he is hungry. πŸ˜› The poor husband never complaints though. <3

And yes, I forgot to tell you. He loved the Fajita Omelette. <3

Using chipotle powder is optional if you do not have it, though I really recommend using a nice brand of chipotle powder. Chipotle powder adds a smoky flavor to the fajita and using just a dash of it makes this omelette more delicious. I have got one chipotle powder from the Sprouts and the flavor is great. Just in case you did not get one at your nearby store then you can order it from Amazon.

Serves 2

Ingredients:

For Omelette

  • 4 Eggs
  • 1 Tbsp milk
  • 1 Fat pinch of crushed black peppercorns
  • Required salt
  • 1 Tsp oil

For Veg Fajita

  • Β½ Cup mixed bell pepper, Julians
  • ΒΌ Cup onion, sliced lengthwise
  • 2 Tbsp spring onion greens, chopped
  • 1 Tsp chipotle powder
  • Required Salt
  • 1 Tsp oil
  • Sour cream, for topping
  • A handful of chopped lettuce, for topping
  • Parsley (fresh or dried), for garnishing

Recipe:

Step 1-Β Heat 1tsp oil on a griddle or skillet pan, saute all the veggies together for 2mins on high flame. Sprinkle required salt and chipotle powder, mix well. Transfer the fajita veggies to a plate

Step 2-Β In a bowl, take eggs, milk, crushed black peppercorns, and required salt. Whisk for a minute

Step 3-Β On the same skillet pan or griddle, pour the egg mixture into the pan and spread evenly by tilting the skillet pan. Cook on the medium-low flame until done from one side. Gently flip the omelette. Spread the veggies fajitas, lettuce, and sour cream over half of the omelette and gently fold over

Place omelette on a plate, garnish with sour cream and parsley, Serve with tea or coffee
