Not that it’s hard to find whole wheat buns in the nearby store, they do sell whole wheat hamburgers which are a good substitute. But, I was looking especially for Mini Buns that too baked with whole-wheat flour. Grrrr! and that looks like next to impossible until and unless some local baker starts baking and selling it here. But that will take time, no? Why not bake your own whole-wheat bun! It’s fun, It’s healthy, and it’s delicious! Now you have no reason to spend those extra bucks to buy buns from the store. Bake your own buns and serve healthy to your family.
Trust me, there is nothing like baking your own bread at home. I mean it when I say so. ❤ I never thought, not even in my dreams that I will ever bake buns at home (though I have baked them multiple times by now) :D. There is something magical how you bake a soft, spongy bread with just a few ingredients. Baking your own bread at home form the scratch is quite a fascinating thing to me. You put a lot of hard work in the kneading and then the resting time of 1hr for the dough to rise looks so long to you, then you give a desired size and shape to the bread and bake it. I won’t be able to describe to you the satisfaction it gives when you see the awesome result.
No exercise and meditation can give you the relaxation like baking a bread can. 😀
These whole-wheat buns are not crumbly at all. Once you start baking your bread with whole-wheat flour, trust me there is no way you are going back to white bread anymore. This is flavorful, fresh, and oh-so GOOD! And this is made with 100% whole-wheat flour so, you can enjoy it guilt-free. They stay fresh and soft for long when kept in an airtight bag/ container. We had these buns for breakfast the next day and they were as soft as they were after baking.
- Whole Wheat Flour, I have used the regular whole wheat flour which I use to make Indian flatbread. Use 100% whole wheat flour to make it healthier. Though if you want you can use half of the whole-wheat flour and half of the all-purpose flour too and follow the same recipe
- Instant Rapid Rise Yeast, Use a good brand of Instant yeast, and if it’s too old (just see the manufacturing date), then I do not recommend using it. They will not give the desired result
- Kneading the dough, do not be lazy while kneading the dough. I know how boring and hard it is sometimes (ask me). But, if you want your buns to be soft and fluffy then knead the dough really well for 8-10mins at least
- Curd, do not skip using curd. It gives a soft texture to the buns and a nice flavor too. I have not tried any vegan substitute for curd yet
- Garlic Salt, If you do not have garlic salt at home then just mince 2garlic cloves and use in the recipe. It surely enhances the flavor of the buns
- Sesame Seeds, using sesame seeds is totally optional. Though I recommend as it gives a nice look to your buns
- Baking Temperature and Time, baking temperature may vary depending upon the size of the buns. To me, 13mins at 430ºF worked perfectly
These mini buns serve with your favorite patty or Indian Aloo Bonda/Vada will be a hit in your next party or serve them as a mini Pav-Bhaji appetizer. You can enjoy eating them with just plain butter and nothing else. No matter what you put in between these buns, you will be going to love them anyway.
Serves 16-18 Mini Pavs
- 1 ¾ Cup whole wheat flour
- 1 Packet Rapid Rise Instant Yeast
- 2 Tsp Sugar
- 1 Tsp Garlic Salt
- ½ Cup warm milk
- ¼ Cup Curd
- 2 Tbsp olive oil
- 1 Tbsp White sesame seeds
- 1 Tbsp oil for brushing

Step 1- In a mixing bowl, take warm milk, curd, olive oil, and yeast. Stir to mix everything and let it sit for 3-4mins. Meanwhile, in another large mixing bowl take whole wheat flour, garlic salt, and sugar. Whisk the dry mixture
Step 2- Add the liquid mixture to the dry mixture and knead to a sticky dough. Add a few tablespoons of water if required. Knead the dough for a good 8-10mins at least. This is a very important step so knead the dough really well. Once done, grease with oil
Step 3- Grease the bowl with oil. Cover with cling wrap and keep it in a warm place. Leave for 1hr. The dough will be double in the size
Step 4- Preheat oven to 430ºF. Remove the dough from the bowl and knead for a minute. Divide the dough into 16-18 equal parts
Step 5- Roll each part into a small ball. Grease a baking tray and arrange the balls. Brush oil and sprinkle sesame seeds on top. Place the pan in the heated oven and bake for 10-14mins (time may vary depending on the dough balls size). For me, 13mins were perfect
Remove the pan from the oven, brush the buns with butter/ oil and transfer the mini buns on a wire rack and let them cool down
