“Aloo Chop”, “Aloor Chop”, “Aloo Bonda”, or “Batata Vada”, these all are similar in the preparation and the ingredients vary depending on the locality and availability of the local ingredients. Spicy mashed potato mixture dipped in gram flour batter and then deep fried. Similar in preparation yet different in taste, they all taste delicious in their own way. ❤
Oozing with flavors in every bite, this chop is Bengal’s tea-time snack, Orissa’s favorite snack with muri, Bihar’s spicy street food…etc etc etc…in short, It’s very famous and favorite amongst Eastern Indian states.
Sometimes deciding what to cook for the next meal is more difficult than cooking the whole elaborated meal. And the cherry on the cake is when you are hungry at 6-60.30PM and you can’t decide whether to have a late snack or an early dinner? Meh! I am sure many of you will agree on the same. I feel you. :D How I wish someone can plan a healthy menu for the whole week and stick it near the kitchen area. I hope my husband is reading this and he will do the honor and prepare a healthy+delicious menu chart. :P
We two, the husband and I, are a big time snacky person. And we want something to munch on at that time. It’s one of those days when I was craving for Mom’s made Aloo Chop. I remember the days when mom prepares these delicious chops and she will serve with fried green chilies and tomato ketchup and sometimes, she will top it up with a chopped onion, tomato, green chilies and coriander leaves with a dash of lime juice. Ahhh…Nostalgia! ❤ Her preparation of Aloo Chop is slightly different from the traditional way of cooking Aloo Chop where everything is the same, instead of deep frying them in a tub of hot oil she would always shallow fry these Aloo Chops with minimum oil.
I tried to recreate my Mom’s recipe today which was great in taste but there was something missing…her special tough…her love! ❤
- Deep Frying Or Shallow Frying, The choice is absolutely yours, if you want you can deep fry else shallow fry them in less oil.
- These can be air-fried too. Check the batter consistency and it it is on the watery side then make it a bit thick.

Serves 7-8 Aloo Chops
For Aloo Chop Stuffing
- 3 Medium sized boiled potatoes
- ½ Cup onion ( 1 medium size), finely chopped
- 2 Garlic cloves, very finely chopped
- 1-inch ginger, very finely chopped
- 2 Green chilies, very finely chopped
- 1 Tsp coriander powder
- ½ Tsp cumin powder
- 1 Tsp red chili powder or as desired
- ½ Tsp turmeric powder
- ¼ Amchur
- ½ Cup coriander leaves, finely chopped
- 1 Tbsp mustard oil
- Salt as required
- 1 Cup gram flour (Besan)
- 1 Tsp turmeric powder
- 1 Tsp red chili powder
- 1 Tsp lime juice
- Salt as required
- Oil for deep frying or ¼-1/3 Cup oil for shallow frying

For Aloo Chop Stuffing
Step 1- Peel the boiled potatoes and take them in a bowl. Using a fork or potato masher, mash them well and keep aside
Step 2- Heat 1tbsp mustard oil in a pan and add the chopped onion. Fry them for 2mins of medium flame and then add chopped ginger, garlic, and green chilies. Fry till the raw smell of ginger-garlic goes away
Step 3- Add coriander powder, cumin powder, red chili powder, turmeric powder, and amchur. Mix well. Add mashed potatoes, coriander leaves, and required salt to the pan. Mix everything very well and turn off the flame. Let the mixture cool down.
Divide the mixture into 8 equal parts and shape them into patties
Step 4- In a mixing bowl, take besan, turmeric powder, red chili powder, lime juice, and required salt. Add water to make a smooth and thick yet flowing batter. Make sure there are no lumps in the batter
Step 5- Heat oil in a large skillet pan for shallow frying. When the oil is hot enough for shallow frying, dip the patties in the batter one by one and place them in the skillet pan
Step 6- Fry the aloo chops on medium flame until crisp and golden brown from both the sides. Transfer to a kitchen napkin to absorb the excess oil
