Paneer Bhurji Quesadillas

“Mexican dish with an Indian twist”, these were my husband’s words for this Paneer Bhurji Quesadillas.

Quesadillas are one of those dishes that makes a delicious appetizer, snacks, or a meal. They are very easy to prepare too and if you have readymade tortillas, then your task is half done.

The good thing about quesadillas are, you can customize them according to your taste and preferences. Fill it up with whatever veggies are available to you.

What makes this quesadillas more delicious are the freshly made tortillas. I have shared the recipe for homemade tortillas in my previous post. Do try that recipe to get the fresh homemade tortillas.

I was so excited after making tortillas that I forgot to soak the beans for my Mexican quesadillas. Nevertheless, I tried my own Indian version of quesadillas with paneer. To make these quesadillas a bit more on a creamy side, add a tablespoon of mayonnaise to the filling.

Serves 4

Ingredients:

For Paneer Bhurji

  • Paneer 250gms, crumbled or grated
  • 1 Medium sized onion, finely chopped
  • 2 Medium sized tomato, finely chopped
  • 1 Small bell pepper, chopped
  • 1/2 Cup coriander leaves, finely chopped
  • 2 Green chilies, chopped
  • 1 1/2 Tsp ginger, grated
  • 1/2 Tsp black pepper powder
  • 1 Tsp kasuri methi
  • 1 Tap lime juice
  • 1 Tsp crushed cumin seeds
  • Salt as required
  • 2 Tbsp oil

For Quesadilla

  • 8 Tortilla wraps
  • 1 1/2 cup mozzarella cheese (any Cheese)
  • Sour cream

Let’s learn step by step recipe with pictures for Paneer Bhurji Quesadilla

Recipe:

Step 1- In a frying pan, heat 2tbsp of oil. Let the cumin seeds splutter, then sauté green chilies and grated ginger

Add the chopped onion, tomato, and bell pepper, fry until mushy

Step 2- Add the grated paneer, mix well. Cook for 3-4mins

Step 3- Sprinkle black pepper powder, required salt, kasuri methi, and lime juice, mix well. Cook for another one minute and then turn off the flame

Cooking quesadillas

Step 1- Heat a skillet pan to medium heat, heat the tortilla from the sides for 10seconds.

Step 2- Now, cover one-half of the tortilla with cheese. Cover the cheese evenly with the paneer bhurji. Spread some cheese over the filling

Step 3- Gently fold over the other half of the tortilla, cook from both the sides until crisp and golden brown

Remove the quesadilla from the pan and cut into wedges. Serve warm with sour cream
