The one person I am missing the most these days is, my husband. I love to try new dishes and he loves to eat. Also, he gives the best feedback ever. I wish I could send food via whatsapp. Lol.
Anyway, here I am trying one of the much awaited dish that I love to eat.
This Lemon-pepper chicken was on my list for a very long time. Though I have tried baked lemon-pepper chicken many a times earlier, I wanted to try this version.
There are some changes in my version of Lemon-Pepper Chicken. I suggest you to try this recipe for a quick evening snack or serve it with Lemon Rice.

Let’s learn step by step recipe with pictures for Lemon-Pepper Chicken
Recipe:
Step 1- Heat oil in a pan and caramelise the onions on medium flame. Leave the extra oil in the pan for frying the chicken
Transfer the onions to mixer grind and grind to a fine paste

Step 2- In a mixing bowl, add all the marination ingredients except chicken. Add the onion paste and mix well

Step 3- In another mixing bowl take chicken pieces and add the prepared marination. Coat the chicken with marination and let it rest for 30mins

Step 4- Heat butter in the same pan with the remaining oil. Sauté bay leaves and dry red chilies

Step 5- Add the marinated chicken and cook on high flame until you see brown spots downside of the chicken. Flip the pieces and cook for another 4-5mins on high flame

Step 6- Turn the flame to low and add the green chilies to the chicken. Cover and cook.
When the chicken is 70% cooked, add the remaining marinade with a little water to the pan

Again cover the pan and cook until the chicken is soft and tender.
Keep on flipping the chicken pieces to avoid burning

Check with a fork to see if the chicken is cooked. Turn off the flame. Transfer the chicken to a plate and squeeze some lime juice. Serve warm with vinegar onion.

This indeed looks so inviting… Loved it!
