Instant Gajar Ka Halwa | Instant Pot Halwa

Gajar Halwa has a charm that can please anyone and everyone. ❤ Gajar Ka Halwa is undoubtedly the most popular winter special dessert or sweet for any occasion and it’s a ritual to have gajar ka halwa in the winter season otherwise winter is incomplete.

I have shared a traditional method for cooking Gajar Ka Halwa where grated carrots are simmered in full-fat milk for hours on low flame. Cooking halwa in full-fat milk and ghee makes the halwa rich which gives a delicious taste. This takes approx 3-4hours of cooking. But in this instant world, everyone wants the instant result for everything. So here I am presenting an Instant or a quick version Gajar Ka Halwa for your instant cravings. 😀 This smells good and tastes heavenly. 🙂

Serves 4

Ingredients:

  • 4 Cups grated carrot
  • 1 Cup whole milk
  • 1 Cup condensed milk (sweetened)
  • 1 Tbsp cashew nuts
  • 1 Tbsp raisins
  • 1 Tbsp pistachio
  • A pinch of saffron strands (optional)
  • 2 Tbsp ghee

Recipe:

Step 1- Turn on IP to sauté mode and heat 1tbsp ghee. When it’s hot, add grated carrot to the IP and fry for 3mins until the raw smell of carrot goes away. Add milk and mix well. Turn the IP to pressure cook (Hi) mode and cook for 4mins with the valve on seal position

Step 2- After 5mins on natural release, do a quick release and open the lid of the IP. Turn the IP to sauté mode and cook until more than half of the milk evaporates. Now add condensed milk and keep stirring to avoid sticking at the bottom

You can add sugar at this step to adjust sweetness or if you are using unsweetened condensed milk

Step 3- Add dry nuts and saffron strands to the IP and mix well. Cook until the halwa thickens and milk is evaporated

Step 4- Add 1tbsp of ghee. Mix well and cook until all the moisture evaporates. Turn off the IP and transfer halwa to a bowl

Garnish with few nuts and serve warm or cold as desired. 🙂

Serves 25

Ingredients:

  • 1 Cup all-purpose flour
  • 1 Cup desiccated coconut, grind them to coarse powder
  • ½ Cup salted butter/ 1 butter stick (at room temperature)
  • ½ Cup powdered sugar
  • 2 ½ Tbsp milk
  • ½ Tsp Vanilla essence
  • ¼ Tsp baking powder
  • A pinch of baking soda

Recipe:

Step 1- In a large bowl, cream butter and powdered sugar together until well combined

Step 2- Add all-purpose flour, baking powder, baking soda, and vanilla essence to the bowl and mix with a spatula to bring it together

Step 3- Add the powdered coconut and mix to form a dough. Close the lid of the bowl and keep this dough in refrigerator for 30mins

Step 4- Preheat oven to 300ºF. Take out the dough from the refrigerator and flatten it using the rolling pin. Cut into the desired shape. Place them on a baking tray and bake for 16-18mins

Take them out from the oven and let them cool completely before storing them. Store them in an airtight container and enjoy the coconut cookies with tea/coffee. 🙂

Bundt Cake | Holiday Bundt Cake | Christmas Bundt Cake | Traditional Fruit Cake

Wish you all a very happy and blessed new year. 🙂 So, everyone enjoyed the extended holiday season. 🙂 After having a great Christmas time with friends and a fantabulous New Year I am back with a sweet recipe.

Though I was done with the Fruit Cake baking before Christmas yet I wanted to try this Christmas Bundt Cake which was there on my baking wishlist because of their pretty looks. What actually is a Bundt Cake? Well, they are the cakes which are baked into a distinctive ring shape cake pan. They look incredibly pretty and appealing to eyes. ❤ There is no single recipe for Bundt Cake. You can try any cake in the Bundt pan. So without wasting any more time I bought this Bundt Pan and finally decided to try this moist and fluffy cake for New Year’s Eve. A sweet start to the New Year. 🙂

There are numerous traditional cake recipes for Christmas Cake and the actually traditional cake is made with dry fruits, plum, and cherries soaked in rum for few months. If you are using rum soak the dry fruits and tutti frutti in rum for 2-3month/ 2-3 weeks or even 2-3days is fine. Few people soak for more than 3months too and that tastes delicious. Have you seen the Christmas Cake color? I used to think they add something to get that beautiful color. 😀 Actually, that comes from caramel. While making caramel you will have to be careful, do not burn the caramel.

Non-Alcoholic Cake, soak the dry fruits in grape juice or orange juice for 3 weeks or 2-3days. The more and more days you soak the better it tastes.

Serves 2 Cake (1 Bundt, 1 Small cake)

Ingredients:

For Soaking

  • ½ Cup raisins
  • ¼ Cup dates (chopped)
  • ¼ Cup nuts
  • ¼ Cup tutti-frutti
  • ¼ Cup dried cranberries
  • 1 Cup orange juice/ grape juice/ or Rum

For Caramel

  • ½ cup sugar
  • ¼ Cup water

For Cake

  • 2 Cup softened butter (salted)
  • 1 ½ Cup powdered sugar
  • 6 Eggs
  • 2 ½ Cups all-purpose flour + 3tbsp all-purpose flour
  • 1 Tsp baking soda
  • 1 ½ Tsp baking powder
  • 1 ½ Tsp cinnamon powder
  • 1 Tsp nutmeg powder
  • 1 Tsp dry ginger powder
  • 3 Tbsp vanilla essence

Recipe:

Step 1- In a pan take sugar and water and let it simmer on low flame until you get this dark brown color and thick thread consistency. Meanwhile, drain the soaked fruits into a bowl and dust with all-purpose flour and keep aside. Keep the leftover rum/ juice to add to the batter

Step 2- Preheat the oven to 350º F. In a large mixing bowl, take softened butter and powdered sugar. With an electric mixer or hand mixer beat until fluffy and smooth. Add egg one by one and beat until mix well

Step 3- Add the all-purpose flour, cinnamon powder, nutmeg powder, dry ginger powder, baking soda, and baking powder the bowl and beat well for 1min and then add the caramel, vanilla essence, and dry fruits to the batter. Add ½ cup water, leftover rum/ juice (approx ¼cup) to the batter and gently fold the batter

Step 4- Grease a bundt pan and a small cake pan. Pour the batter into the pans and tap it on the counter to adjust well the batter. Bake for 40mins on 350ºF and then 10mins on 250ºF or until the toothpick comes out clean. Let it cool down a bit and then remove on a cooling rack and let it cool down completely before storing it

Once cooled, wrap in an aluminum foil and store in an airtight container. Store in a cool and dry place. 🙂 Enjoy and Happy New Year once again. 🙂

Mixed Berries Breakfast | Flavored Greek Yogurt With Honey Bunch Oats

Whether you are always in a hurry in the morning or too lazy to prepare something or don’t like cooking at all in the morning, I have a perfect solution for your breakfast, Overnight mixed berries oats. Yes, you heard me right. As the name says, you can prepare this a night before and eat in the morning. This is a super duper easy recipe which ANYONE can prepare. No cooking required AT ALL.  Sounds great! Isn’t it?

Overnight oats are popular breakfast these days. You can find thousands of ideas on how to prepare overnight oast and the varieties. Customize the recipe according to your taste and preference and enjoy your no cooking morning breakfast. Prepare in a jar and grab and go! Perfect for busy people. Grab a jar and eat on your way to the office, grab a jar and leave for college, grab a jar and la..la..la. 😀 No dishes in the sink. Ahhh…Morning bliss. 😀

Ingredients:

  • 1 Cup Greek yogurt
  • 1/2 Cup mixed berries (blackberry, blueberry, and raspberry)
  • 1 Cup honey bunch oats (replace with your favorite oats)
  • 1 Banana, thinly sliced
  • Honey as required for sweetness

Recipe:

Step 1- In a bowl take Greek yogurt with mixed berries and blend until the berries are pureed. Add honey and adjust the sweetness level as required

 Step 2- Take 2 glass or glass jars and firstly layer it with honey bunch oats and then layer it with the prepared flavored yogurt. Top with sliced banana and pour honey for sweetness. Again layer with the honey bunch oats and then with flavored greek yogurt. Put some fresh berries on the top. Leave overnight in the refrigerator

Do I need to tell the serving suggestion? Obviously NO. 😀 Just grab a jar and eat your healthy breakfast. 🙂

Flavored Greek Yogurt​ | Homemade Berries Greek Yogurt

Oh-My-Goodness…I just made three flavored Greek yogurt and b-u-o-yyy they look pretty gorgeous. ❤ And by the way, this is the first time I made flavored Greek yogurt and I am absolutely loving this homemade, sugar-free and guilt-free flavored Greek yogurts.  Try these Flavored Greek Yogurt at home and I assure you will never go back to buying store-bought Flavored Greek Yogurts. My favorite brand of flavored Greek yogurt is Chobani and I wanted to replicate the taste and texture. BANG ON! The perfect taste and texture I got and that too without adding any artificial color or sweetener. HAPPY ME! 🙂 For sweetener, to avoid sugar I have added organic raw honey to make the yogurt sweet.

Flavored Greek yogurt with some boiled eggs on the side is my hubby’s favorite breakfast. 😀 I feel good that morning breakfasts are sorted for few days. Phew! And me? Oh, I love having flavored Greek yogurt whenever I can crave for ice-creams. Just freeze them for an hour and eat…a healthy version of ice-cream.

Ingredients:

  • 2 Cup low-fat Greek yogurt
  • ¼ Cup fresh blueberries
  • ¼ Cup fresh raspberries
  • ¼ Cup fresh blackberries
  • Honey as required

Recipe:

Step 1- One by one,  take berries separately with honey in a jar and pulse them for 10-15 seconds and transfer to bowls separately. Do not puree the berries

Step 2- Take separate bowls for each flavor, add 1 Tbsp of the berry pulp with the ¼-½ cup of Greek yogurt, Gently stir and top with some berries. Make another batch and enjoy

The fresh homemade flavored Greek yogurt is ready to eat. Enjoy eating fresh and healthy. Store in refrigerator. It stays good for 3-4days.

Vanilla-Chocolate Sponge Cake | Half Chocolate Half Vanilla Sponge Loaf

Lightest, fluffiest and simplest recipe for a sponge cake. A very light and delicate cake (not in calories though 😛 ) for your small get together and parties. This is the best cake to try if you are a beginner or running short of time to prepare any other cake. This could be your favorite snack for tea/coffee time or the morning breakfast with a warm glass of milk. This is not a traditional sponge cake as I have added my version to it…i.e. Cocoa Powder. 😀 Feel free to skip the cocoa powder to get the traditional vanilla flavored sponge cake.

Ingredients:

Recipe:

Step 1- Preheat the oven to 375ºF.

In a large mixing bowl take softened butter sticks and granulated sugar. With an electric mixer or hand mixer beat until they are well combined and fluffy

Step 2- Mix in the first egg and beat well. Add eggs in steps and beat well after each addition until the mixture is creamy

Step 3- Beat with an electric mixer on high speed. If using a hand mixer beat for at least 4-5mins. Add vanilla essence and milk to the creamy mixture and beat for 1min

Step 4- Add the flour, baking soda, baking powder, and salt to the mixture and fold well using a spatula. Transfer half of the batter to another bowl and add cocoa powder, gently mix

Step 5- Grease a loaf pan and pour the vanilla batter into the pan and add tutti-frutti then pour the chocolate batter and again add the remaining tutti-frutti over the batter.  Stir the batter gently with a fork. Bake for 35-40mins or until the toothpick inserted comes out clean. Remove from the oven and let it cool down

Once the cake is cool transfer on a plate and slice into desired size and store in an airtight container. Well, to be honest, don’t worry about the storing thing because you won’t be able to resist your temptation. 😀

Chocolate Cake | Basic Chocolate Cake Recipe

Everyone loves Chocolate? Yes? Of course YES! If your answer by ANY CHANCE is a No then, my friend, you need a doctor. Just Kidding! 😛 Well, here I am assuming everyone loves Chocolate. What does chocolate mean to you? To me Chocolate means celebration, be it small or big, a celebration is a celebration and they are incomplete without chocolates and cakes. 😀 And what’s better than a fudgy, moist chocolate cake. 🙂

I promise you will going to love this chocolate cake. This is a one bowl cake recipe, which means you mix everything in one bowl and transfer to the baking pan. Even if you have never baked anything still you can try this basic chocolate cake recipe.

Recipe:

Step 1- Preheat oven to 350ºF. In a large mixing bowl take oil, milk, eggs, vanilla extract, and powdered sugar. Whisk well using a hand whisker and then add the unsweetened cocoa powder to the bowl. Blend well without forming any lumps

 

Step 2- Add all-purpose flour to the liquid mixture with baking soda, baking powder, and salt. Stir until everything is well blended

 

Step 3- Mix in the boiling water to the batter and whisk until well blended. Grease two baking pans with melted butter/oil and pour the batter evenly into each pan and bake for about 20-25mins or until the toothpick inserted in the center comes out clean. Remove the pans and let the cakes cool down completely

 

 

Step 4- Take out the first cake and layer with the chocolate frosting. Put the second cake on the top and layer it too with the frosting

 

 

Add cake sprinklers of your choice. Serve and enjoy
