Schezwan Fried Rice

“Hot & Spicy Schezwan Fried Rice”

A veg fried rice from Indo-Chinese cuisine. Schezwan fried rice is the best option if you are looking for something mouthwatering and spicy. This schezwan fried rice recipe is deep colored with bursting flavors and also quite spicy.

It is very easy to prepare at home with leftover rice. chopping veggies may take some time as you need to chop the veggies very small. You can even use vegetable chopper. You can use vegetables according to your taste and preference. Here I have used carrot, french beans, onions, celery and bell peppers. You can also add baby corn, mushroom, cabbage, green peas.

Schezwan sauce is the main ingredient in schezwan fried rice. You can get the schezwan sauce in the market but here I have made schezwan sauce at home. It is easy to make and you can also store it for days and use with other dishes. You can skip vinegar in fried rice as you are using it in making schezwan sauce.
Ingredients:
For Schezwan Sauce:

  • 10-12 Dry red chilies
  • 1 Small chopped onion
  • 1 Tbsp ginger-garlic paste
  • 1 Tsp black pepper powder
  • 1 Tbsp soy sauce
  • 1 Tsp vinegar

For Schezwan Fried Rice

  • 1.5 Cup cooked rice
  • 2 Cup chopped vegetables (carrot, french beans, onions, bell peppers and celery)
  • 1 Tbsp chopped garlic
  • 2 Tbsp schezwan sauce (recipe given below)
  • 1/2 tsp black pepper powder
  • 1/2 tsp  vinegar or apple cider vinegar
  • 2 Tbsp vegetable oil
  • Salt

Recipe:
For Schezwan sauce
Step 1- Soak 10-12 dry red chilies in luke warm water for 30mins
Step 2- Drain the red chilies, break them and add to blender and make a smooth paste
Step 3- Heat oil in pan and add ginger-garlic paste and saute for 30secs
Step 4- Now add chopped onions and fry till golden brown and then add the red chili paste
Step 5- Saute till it starts leaving oil and then add black pepper powder, salt, soy sauce and vinegar.
Step 6- Saute for another 2mins and then turn off the flame and let it cool
 
For Schezwan Fried Rice 
Step 1- While cooking rice add salt and 1/2 tsp of oil. Once the rice is cooked let it cool for 15mins
Step 2- Heat oil in a pan and chopped garlic and saute. Don’t let it brown
Step 3- Add chopped veggies and fry on high flame and keep stirring
Step 4- When the veggies are light brown, add schezwan sauce and mix well
Step 5- Add rice in parts and mix well. Now add salt, black pepper powder and vinegar, stir well
Step 6- Turn off the flame and garnish with chopped spring onions or coriander leaves.

Serve hot and spicy schezwan fried rice with Garlic Paneer , manchurian, or any other your favorite side dish.
