Baingan Bharta or in some parts of India it is known as Banigan Chokha.
“Baingan Bharta/Chokha” Another Punjabi AND Bihari recipe added to the list 😀 Baingan Bharta is a Punjabi dish where Baingan is fried with other ingredients and Baingan Chokha is a Bihari dish in which everything is roasted/ non-fried. Super yummy and easy dish to prepare.

Baingan bharta/ Chokha is a comfort food when you don’t want to cook and looking for something less spicy. Roasted Baingan gives the mouthwatering taste to the bharta/ Chokha. It goes well with chapati, paratha or as a side dish to rice or in Bihar Baingan Chokha is generally eaten with Litti.
Here I have followed the Bihari Style Baingan Chokha recipe where everything is roasted.
Ingredients:

  • 1 Large Baingan/ Eggplant
  • 2 Medium Tomatoes
  • 1 Medium onion- chopped
  • 5-6 Garlic cloves
  • 2 Green chilies- chopped
  • Coriander leaves
  • Pinch of asafoetida
  • 2 Tbsp mustard oil
  • Salt as required

Recipe:
Step 1- Peel onion and wash with baingan, tomatoes, green chilies. Pat dry them and apply some mustard oil if you are roasting them on a pan/tawa. Insert galic cloves in baingan
You can also broil baingan, onion and tomatoes in oven for 15minutes. I prefer to roast them on pan/tawa
Step 2- Heat a pan/tawa and roast baingan, onion, green chilies and tomatoes on high flame. After 10mins you will notice that the brinjal’s skin begins to char and the inside begins to get tender
Insert a fork or knife in brinjal. It should be soft from inside
Step 3- Wash brinjal and tomatoes with cold water and peel them. Chop the onion, and green chilies. Mash the tomatoes and baingan separately
Step 4- Heat oil in a pan and add pinch of asafoetida. Add chopped green chilies and onion and saute for a minute
Step 5- Turn off the flame and then add mashed tomatoes, mashed baingan, salt and mix well

Garnish with coriander leaves and serve.
