Eggs make a perfect breakfast in any form, sunny side up, poached egg, boiled egg, scrambled egg, fried egg, omelette etc. Amongst all these, I love omelette because with a few ingredients you can make yourself a delicious and filling breakfast and at the same time you can be creative with ingredients which are fun. 😀

I am not a morning person and by that, I do not mean I can’t wake up early in the morning. 😀 I wake up pretty early in the morning but sometimes I really get confused about what to serve for breakfast which is healthy and filling too. But, when you have eggs in the fridge then all you need to do is grab a few ingredients and make your favorite low carbs breakfast, Omelette. Adding cheese and Avocado can add good fat to your breakfast.
This summer special omelette is packed with superfood Avocado, cheese and cherry tomatoes which will keep you energetic throughout the day and will keep your tummy full for a longer time. Make this deliciously beautiful omelette in less than 5mins with this easy-peasy recipe.

Serves 2
Ingredients:

  • 4 Eggs
  • 1 Avocado, halved and sliced
  • 6-8 Cherry tomatoes, halved
  • 2 Tbsp grated cheese (your choice)
  • 1 Tsp oregano
  • ¼ Tsp crushed black pepper
  • 1 Tsp dried parsley, use fresh if you have
  • 1 Tsp oil/ butter
  • Salt as required

Recipe:
Step 1- In a bowl, add eggs, oregano, crushed black pepper, required salt and whisk to mix everything


Step 2- Heat oil in a skillet, pour the egg mixture and spread evenly. Cook on a medium-low heat until golden from one side and flip without breaking it

Step 3- Add the grated cheese and cook until the cheese melts. Place avocado, cherry tomato over half of the omelette and cook until another side turns golden too

Step 4- Fold over remaining half of the omelette to enclose the filling. Transfer to plate and garnish with fresh or dried parsley
